Apple & Cinnamon Muffins

INGREDIENTS

  • 2 cups all-purpose flour

  • 1 cup sugar

  • 2 tsp baking powder

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ½ tsp baking soda

  • ½ tsp salt

  • 2 Ambrosia Gold® apples, peeled, cored and diced

  • 2 eggs

  • 1 cup whole milk

  • ½ cup unsalted butter, melted and cooled

  • 1 tsp vanilla extract

Icing

  • 1 cup powdered sugar

  • 2 to 3 Tbsp milk

  • ½ tsp vanilla extract

DIRECTIONS

  • Preheat oven to 350 F. Line a 12-cup muffin pan with paper liners.

  • In a large bowl, whisk flour, sugar, baking powder, cinnamon, nutmeg, baking soda, and salt. Stir in apples.

  • In a medium bowl, combine eggs, milk, butter, and vanilla. Add to the dry ingredients and mix until combined; do not overmix.

  • Divide batter evenly among the muffin cups. Bake 18 to 22 minutes, or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.

  • Prepare the icing: Mix powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled muffins.

Makes 12 muffins
