Apple & Cinnamon Muffins
INGREDIENTS
2 cups all-purpose flour
1 cup sugar
2 tsp baking powder
1 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp baking soda
½ tsp salt
2 Ambrosia Gold® apples, peeled, cored and diced
2 eggs
1 cup whole milk
½ cup unsalted butter, melted and cooled
1 tsp vanilla extract
Icing
1 cup powdered sugar
2 to 3 Tbsp milk
½ tsp vanilla extract
DIRECTIONS
Preheat oven to 350 F. Line a 12-cup muffin pan with paper liners.
In a large bowl, whisk flour, sugar, baking powder, cinnamon, nutmeg, baking soda, and salt. Stir in apples.
In a medium bowl, combine eggs, milk, butter, and vanilla. Add to the dry ingredients and mix until combined; do not overmix.
Divide batter evenly among the muffin cups. Bake 18 to 22 minutes, or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.
Prepare the icing: Mix powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled muffins.
